Vegan Apple Crisp for One

Vegan Apple Crisp for One

It's safe to say I'm no master baker; I usually leave that up to my sister. But that doesn't mean I'm immune to an inevitable sweet craving post dinner. Apple Crisp has long been a favorite of mine. The crumbly crust, perfectly warm apples, all drenched in ice cream. What is more autumnal? Determined to enjoy this simple pleasure on my own last week, I created this simple take on a true classic. I like it because most of the ingredients are usually on hand. I also like that thanks to the tiny size, I'm less prone to devour six servings while watching Love Story. (It's happened before.) It's not complicated, but usually the best things aren't.

I have no idea what variety of apple this is, but I do know this recipe also works excellently with peaches.

 Mix it up.

 All ready for the oven.

Wrapped in a towel not for stylistic purposes, but because it was straight out of the oven. This really is the best way to enjoy it, which I did promptly after photographing it.
